asian-style chicken soup

I make soup pretty much every week...it's cheap filling and lasts...well most of the time...this week I made asian-style chicken soup for a nice change....and it lasted a day and a half and it was gone! we loved it and are gonna make this a regular on our menu.....

Its super easy...make chicken broth i usually put chicken skinned still on the bone..celery, onions and carrots.. boil til chicken is cooked through....after take everything out (i ended up straining it to get all the little bits out) then you slice up a 2 inch piece of ginger in the broth and simmer for about 10 min (then i removed the ginger pieces)...they say at this point to add 3tbsp of fish sauce and 4 tsp of soy sauce..i opted to just add alittle of both in both mine and mikes bowls cause I didn't think miles needed any of that...then we bought really thin rice noodles i boiled some water put the noodles in a large mixing bowl and added the water and let them sit til they were ready....kinda like making ramen noodles

Then I began assembling the bowls ....i ripped up the chicken from making the broth and added it to each bowl....then the rice noodles I put a few pieces of fresh basil in each bowl..added the soy and fish sauce to mine and mikes ...i forgot cilantro and scallions which would be awesome..but i forgot my list at home when we went shopping...of course...then i sliced cherry tomatoes threw a few in and added a wedge of lime...it was sooooo good...and i swear it helped us get better...try it its worth the little bit of extra work
(I did this during the snow storm so I had time....shortcut just use store bought chicken broth and you can always rip up a premade chicken or just bake up a few chicken breasts) enjoy!
Miles wasn't crazy about the really thin noodles ...but he loved the broth. he was working so hard trying to eat off the spoon...it was cute and very messy ...most landed on him..oh well he had a blast!

so sweet.....bib was pointless...it was quite a mess! xoxotrash
