sorry its been so quiet over here we have had a crazy past few weeks....i got sick again..ugh another sinus infection...anyway i have a few recipe posts coming up and still need to post the video of my nieces dance team competition.....i promise to get more post done very soon....the last two days have been so sunny and warm and we have been spending the days outside having fun! I started weeding my gardens and getting the yard ready for spring...i hate yard work..i hate bugs..weeding..planting..watering...but love to have flowers around..i need to win the lotto so i can hire someone to do these things for me....but in the meantime its just me and those damn weeds. I still have alot to do but i'm happy ive already started the process...our yard needs alot of work..and this year im determined to make it beautiful....i want miles to have an outdoor space thats fun and exciting and beautiful...a tall order but i think me and mike can get it done....anyway heres a few pics of outdoor fun...and i'll be back very soon with more posts!

chicken pot pie
i made chicken pot pie yesterday for the first time...actually it was also the first time i've ever eaten it..i know but my family is polish and they just don't make food like that..when i told my sister i was making it she called it so american!LOL....but i've always thought it looked good so i decided to give it a try...it was actually pretty easy to make and came out delicious!! here's the recipe give it a try!
you will need:
about a pound of chicken breast cubed
1 cup sliced carrots
1 cup frozen peas
1/2 cup celery
1/3 cup butter (i know crazy but thats why its delicious)
1/3 cup onions chopped
1/3 cup flour
1/2 tsp salt (we ended up needing a bit more)
1/4 tsp pepper
32oz carton chicken broth (reserve 1 3/4 cups for sauce)
2/3 cup milk
2 pre-made pie crusts
preheat oven 425
boil chicken, carrots, peas and celery in the chicken broth
then in another pot add butter and onions over med heat til onions are tender then add the flour, salt and pepper...mix til it all pulls together...i couldn't take pics of this step because i was holding mister grey while doing it....after it pulls together add it to the chicken and veggies and add the milk...mix ..then depending on how thick or thin you want the sauce add chicken broth one alittle bit at a time i added 1/2 cup....
looks gross but it was yummy!
then take one of the pie crust and place it in a pie dish...fill...cover with the other pie crust...crimp edges and put slits in the top to allow steam to come out....oh shit i forgot i had boiled potatoes in my fridge from the night before and cubed them and added them in the end...
ok i know it doesn't look pretty but................ THIS GUY didn't want it to look nice! grey thought it was much better if i attempt these things for the first time ever one handed! if i wasn't holding him or in his face talking to him he was not a happy guy..so one handed it was
ok i should also tell you that trying to beat an egg one handed is not an easy task and then brushing it on was not easy either so one side had alittle too much egg so i ended up cutting that piece off and trashing it..i just didn't think mike or miles wanted scrambled egg on top!
it was delicious! i had extra filling but no more pie dough so but i did have that fake biscuit dough and put it on top
in theory this should taste amazing and when it came out it looked great!
but the biscuits never cooked through and so today when i put it in the oven to warm it just burned on top and was still doughy on the bottom..lesson learned: bake biscuits first then place on top otherwise you lose a whole dish of pot pie...bogus.....
anyway the first one was yummy and both mike and miles were happy..so i was happy...next time i will add more salt and maybe other veggies..like kale and asparagus and maybe garlic...well i'll definitely try this one again...minus the biscuits....xoxoxtrash

Dance team
Last saturday i went to see my niece's dance team competition. It was amazing! A bunch of teams from around connecticut competed and my niece alicia's team won second place in hip hop! They really were awesome! Since she's now a senior this is her last dance recital type thing that we will have :( She has been dancing since she was just a wee little thing and I can remember going and watching her dance..fumbling like all little ones do ...so to see her now blew my mind! She has a real gift and watching her dance after working so hard after so many years made my heart feel so good. I'm beyond proud of her and can't wait to see what amazing things she does next! But let me tell you it was my first experience at one of these things and if you like so you think you can dance like i do...you would love this! Even though it was sooo incredibly loud and a bit sweaty in there and even though I had a pounding headache i had so much fun! I wish she invited me to all of them!!! (guilt..alicia ;) I made 4 signs and screamed til I almost peed my pants!! I had a blast!!!

Discovery Museum
This weekend we went to the discovery museum in bridgeport...we went with a big group..jess, dan and madeline..melody, phil, devan and amber...and my sister annette and her 3 kids alicia, julia and cj! It was so cool to have everyone together for an afternoon..i loved it! There wasn't too much for the babies to do but they just liked running around the place...and it usually costs $9.50 per person but it was free admission which was sooo cool...especially since there wasn't too many things to do...we tried to go to the show in the planetarium but miles and amber totally didn't like it...it was too dark and the show was for ages 7 and up (we missed the baby show by 2 min...bogus) so it was too boring for the babies...all in all it was a good afternoon..mainly because its hard to get everyone together in one place...so in the end i was happy! My sisters kids are all grown up....so it was so special to have them join in the fun! My goddaughter alicia is 17 ..almost 18 and is going to be going away to college in the fall so any chance i get to spend time with her is awesome! Julia is 15 almost 16 so I get alittle more time with her thank goodness...plus shes amazingly good with miles...shes patient and loving and its amazing to see what a great lady shes turning into. cj is 11 so we have plenty of time before hes off to college..i can't even think about that! Devan is 15 and is seriously a great kid..ok i shouldn't say kid since he's waaaay taller than me but he also has this amazing gift with kids..miles ADORES him! well it was just a really special day and here's some photos....
